NAKED CARROT CAKE

This recipe is NAKED CARROT CAKE. Admittedly, cake isn’t really going to be the healthiest recipe on the planet, but this version, without the cream cheese topping brings those calories down significantly. Not only is this cake super easy to make, it is really yummy delicious and there are lots of nutritional values in the ingredients to make us feel a bit less guilty about tucking in! INGREDIENTS

8 oz (225g) Self Raising Flour

4oz soft brown sugar
2 tsp Baking Powder
1 tsp cinnamon (optional)
2 Bananas mashed
4 oz (100g) Carrots grated
2 large Eggs
2 oz (50g) Walnuts chopped
150 ml Sunflower Oil

METHOD

Line an 8” cake tin and preheat the oven to 180º/160º fan, Gas Mark 4 (I found this out on Alexa!!)

Literally, just put all the ingredients into a bowl and mix together well, either by hand or in a food mixer/processor

Scrape the carrot cake batter into the lined tin and pop it in the oven to bake for 50-60 minutes.

Voila …. Naked Carrot Cake, what could be more simple!

Now I did promise to include the recipe for the cream cheese topping for those of you who couldn’t bear to think of an undressed carrot cake, so here it is in full fat Mary Berry style indulgence, but of course, this will increase the calories quite a bit!!! Just saying!!

CREAM CHEESE TOPPING

6 oz (175g) Full Fat Cream Cheese
2 oz (50g) softened butter
4 oz (100g) sifted icing sugar
A few drops of vanilla essence
Walnut halves to decorate

METHOD

Put all the ingredients for the cream cheese topping in a bowl, give it a good old whizz up, either by hand or in a mixer, then spoon on top of the Carrot Cake and spread out, maybe adding in a few swirls! and decorate with a few more walnut halves.
