This is delicious on top of your Granola or porridge with a spoonful or 2 of your favourite yoghurt 

Ingredients

8-10 sticks of Rhubarb

Zest and juice of 1 large Orange

1/2 – 1 cup of sugar

A drizzle of Honey or Maple Syrup

1tsp Vanilla essence

Cut the rhubarb into 4-6” pieces and lay in the bottom of a roasting tin.  Mix in all the other ingredients so the rhubarb is coated.

Bake in the oven (160 degrees) until the rhubarb is soft.

Cool and pop into an airtight container.

Lasts for approximately 4 days in the fridge
