This is a gorgeous easy to make homemade Granola, much much more delicious than shop bought granola, that was given to me by Susie and James from Le Pignoulet, the wonderful french farmhouse we are lucky enough to stay in on our French Pilates Retreats.

GRANOLA PIGNOULET RECIPE
2 1/2 CUPS OATS
1 1/2 CUPS ALMONDS (CHOPPED)
2 CUPS MIXED SEEDS (I use Pumpkin and Sunflower seeds)
3 TBSP COCONUT OIL
3 TBSP MAPLE SYRUP
3 TSP CINNAMON
RAISINS 1 CUP
You can also add in extras such as desiccated coconut, dried apricots/date/figs etc
METHOD
Preheat your oven to approximately 160 degrees
In a large baking tin add all of the ingredients apart form the raisins and give a good stir to mix in the coconut oil and maple syrup evenly.
Bake for 15 minutes, give another good stir, bake for another 15 minutes.
Add the rains and bake for a final 10 minutes.
When the Granola has cooled, tip into a sealable container such as a Kilner jar or a tin and enjoy.
Perfect served with Rhubarb Compote (see Recipes) and Greek Yoghurt.
